Almond and coconut flours have a narrow "perfect bake" window. Even 2 minutes over can cause the natural oils to reach a state where they no longer provide perceived moisture.

Check doneness 5-7 minutes before the recipe suggests. Use the "moist crumb" test instead of the "clean toothpick" test.
