The Physics of the Rise
In a wheat-based dough, carbon dioxide is trapped by a network of elastic gluten proteins. In the gluten-free laboratory, we do not have that natural balloon. Instead, we must create a structural scaffold that can withstand the internal pressure of leavening without popping or collapsing. This game simulates that delicate balance in real time.
1. The CO2 Surge: Leavening Agents
Whether you are using yeast or a combination of lemon juice and baking soda, the goal is the same: the production of gas. This gas creates the air pockets that result in a light crumb. However, because GF structures are often brittle, a sudden surge in gas can overwhelm the binders, causing the air pockets to merge and collapse. 2. Thermal Stability: The Oven Spring
The first 10 minutes of baking are the most critical. As the temperature rises, the gas expands, stretching the dough to its maximum height.
